RC Cream of Potato Leek Soup Mix is a versatile product that yields a hearty and flavorful soup when reconstituted with water and simmered. This dry product has a long shelf life and requires only minimal storage space.
To prepare, add the product to water and simmer until the potatoes are tender, about 1 hour. A double boiler can be used to help reduce scorching and the amount of stirring required. Longer cooking will enhance the flavor. For a richer flavor, 1-2 quarts of milk can be used to replace an equal amount of water when preparing the soup mix. Chopped vegetables, such as broccoli, spinach or celery may be added to create different varieties.
