Bleu Cheese Beef Sliders
Ingredients
3 Tbsp. dry Bleu Cheese
10 lbs. 85/15 ground beef
2 Tbsp. Roasted Garlic Base
9 cups water
1 package Meat Enhancer
Instructions
(yields 18 lbs. raw seasoned meat)Mix No Added MSG Roasted Garlic Base with water and then blend in Meatball and Meat Loaf Enhancer. Let mixture rest for 5 minutes and add Bleu Cheese Dressing Mix and ground beef. Blend mixture until all ingredients are thoroughly incorporated. Shape seasoned mixture into size of bread to be used and sear on both sides until internal temperature reaches 165°F minimum. Place on preferred bread, top with lettuce & tomatoes then serve with Bistro Sauce (recipe follows).
Bistro Sauce
Ingredients
6 cups mayonnaise
3 Tbsp. Pommery Whole Grain Mustard
1 Tbsp. tomato paste
¼ tsp. Extracts, Flavors, and Colors (Paprika Color)
½ tsp. Extracts, Flavors, and Colors (Horseradish)
Instructions
(yields 32 oz.)
Assemble all ingredients in a mixing bowl and blend well. Refrigerate after producing. Bistro Sauce will gain flavor after it is produced, so make at least 1 day in advance of use. Bistro Sauce is a great spread for sandwiches, paninis, wraps, burgers & sliders, subs & melts, or as an accompaniment for grilled fish or vegetables.
