Chicken Satay
Ingredients
4 tsp. curry powder
4 tsp. soy sauce
1 tsp. Liquid Seafood Consommé Prep
1½ Tbsp. light brown sugar
4½ Tbsp. peanut butter
¾ cup plain yogurt
¾ cup milk
2 lbs. chicken, boneless and skinless
pinch ground nutmeg
pinch ground cloves
½ tsp. cinnamon
1/8 tsp. Garlic in Oil
¼ tsp. Ginger Puree
1½ Tbsp. Coconut Flavor
Instructions
(yields 32 hors d’oeuvres)Cut the chicken into strips. Mix the remaining ingredients and divide in half. Marinate the chicken in half of the mixture for 2 hours. Skewer the chicken and grill. Use the remaining mixture to baste the chicken as it grills.
