Curried Chicken Salad
Ingredients
1 banana, peeled and sliced
¼ cup raisins
4 oz. pineapple, diced
½ tsp. Ginger Puree
¼ cup plain yogurt
½ cup mayonnaise
2 tsp. light brown sugar
1 Tbsp. vegetable oil
4 tsp. curry powder
¼ cup almonds, toasted
2 cups chicken, poached and diced
ground black pepper to taste
½ tsp. Coconut Flavor
Instructions
(yields 4-6 portions)Heat the vegetable oil, add the curry powder and brown sugar. Heat until aroma develops. In a separate bowl, combine the mayonnaise, yogurt, Coconut Flavor and Ginger Puree. Mix well. Add the curry and brown sugar mixture. Add the pineapple, raisins, banana, almonds and chicken and toss to coat.
