Chocolate Mocha Meringue Sandwiches

Ingredients

1 package Mousses (Chocolate, frozen)
sprinkle of cocoa
2 Chocolate Meringue Cookies
1 frozen mocha Chantilly crème filling
3 oz. Caramel Crème Anglaise
2 oz. Caramel Sauce
3 each fresh raspberries

Instructions

(yields 1 dessert)

Layer dessert sandwich starting with a chocolate meringue cookie on bottom, topped with frozen Mousses (Chocolate) filling, frozen Mocha Chantilly Crème filling, and topped with another chocolate meringue cookie. Spread 3 oz. caramel crème anglaise sauce on a chilled 12 inch plate and create circular designs with caramel sauce in caramel crème anglaise. Place layered chocolate meringue sandwich in middle of plate and decorate with fresh raspberries on rim of plate. Sprinkle with cocoa powder and serve when frozen layers have just started to melt.
