Feta & Calamata Olives
Ingredients
8 oz. feta cheese
2½ quarts salad oil
1 quart white vinegar
1 pint water
½ cup sugar
1 cup calamata olives, chopped
1 package Siena Vinaigrette
Instructions
(yields 1+ gallons)Mix the package contents with the sugar. Place water in a separate mixing bowl. Add the dry mixture and whip for 5 minutes at medium speed. Scrape the bowl, add vinegar, and mix for 3 minutes at medium speed. Add salad oil and whip for 6 minutes at high speed. Add cheese and olives, mix well, and store refrigerated for several hours or overnight.
