Herbed Dressing
Ingredients
2 Tbsp. fresh lemon juice
1 Tbsp. red wine vinegar
1 cup low fat cottage cheese
1 cup yogurt
2 Tbsp. Chopped Shallots in Oil
1 tsp. Garlic in Oil
1 tsp. oregano
2 tsp. Basil in Oil
2 tsp. chopped parsley
½ cup 2% milk
salt and pepper to taste
Instructions
(yields 10-2 oz. portions)Place all ingredients in a blender and process until smooth. Adjust seasoning with salt and pepper. Chill thoroughly before service. For a richer dressing add 2 or 3 diced plum tomatoes to the above recipe.
