Turkey Meat Loaf

Ingredients

3 Eggs
1½ tsp. Poultry Seasoning
10 oz. Fresh Arugula
1 oz. Vegetable Oil
6 oz. Fresh Onion diced
1 oz. Garlic in Oil
4 lbs. Ground Turkey Meat**
3 oz. Fresh Celery diced
6 oz. Sour Cream
8 oz. prepared Turkey Base
1 Tbsp. Harvest Vegetable Base
3 oz. Plain Bread Crumbs
1½ tsp. Black Pepper
12 oz. Tomato Paste

Instructions

(yields 6 lbs.)

Wash arugula thoroughly removing all sand, drain & cut into 1 inch pieces. In a sauté pan heat vegetable oil and add onion & Garlic in Oil, sauté until onion is transparent. Add arugula and sauté until it wilts. Cool to 40°F minimum. Prepare Turkey Base. In a large mixing bowl combine all ingredients and mix until all is incorporated. Form into a loaf on a parchment lined sheet pan. Bake in a 350°F oven until internal temperature reaches 165°F minimum.

Ingredient Note**
Ground Turkey Breast alone can be used in the recipe if you wish. A mixture of half white & dark ground Turkey meat is suggested for a moister loaf.
