Chardonnay Poached Salmon

Ingredients

1 qt. water
1 qt. Chardonnay
2 Tbsp. Chopped Shallots in Oil
1 carrot, chopped
½ bunch parsley
¼ tsp. ground black pepper
1 bay leaf
8 portions of salmon-6 oz. each

Instructions

(yields 8-6 oz. portions)

Bring the water, wine, Chopped Shallots in Oil, carrot, parsley and bay leaf to a boil. Reduce heat and simmer for 10 minutes. Place the salmon side by side in a hotel pan, and pour the hot poaching liquid over the salmon. Cover, and poach over medium heat for 4-6 minutes, until the fish is flaky. Remove from the heat and serve with the Leek Sauce.
