Gingered Tomato Jam

Ingredients

1+ Tbsp. Ginger Puree
½ tsp. Liquid Vegetable Consommé Prep
1 Tbsp. lime juice
¼ tsp. ground black pepper
2 lbs. plum tomatoes, seeded and small diced
1 Tbsp. olive oil
2 tsp. Garlic in Oil
½ cup Chopped Shallots in Oil
2 Tbsp. chopped parsley
1 Tbsp. butter
4-6 drops Cilantro Flavor
4-6 drops Lemongrass Flavor

Instructions

(yields 2+ cups)

Slowly brown the Chopped Shallots in Oil and the Garlic in Oil in the olive oil. Add the tomatoes, pepper and lime juice. Simmer over low heat 10-15 minutes. Remove from the heat and add remaining ingredients. Mix well, serve warm.
