Harvest Vegetable Rice with Mango

Ingredients

1 Tbsp. parsley, chopped
6 cups prepared Harvest Vegetable Base
3 cups white rice
2 ribs celery, small diced
¼ cup Chopped Shallots in Oil
1 Tbsp. olive oil
1 mango. peeled, seeded and small diced
1 lime, juiced
2-3 tsp. Mango Extract Compound

Instructions

(yields 20-24 portions)

Sauté the vegetables in oil. Add rice and toss to coat. Add the prepared No Added MSG Harvest Vegetable Base and Mango Extract Compound. Bring to a simmer. Cover and bake in a preheated 350° oven for 15-20 minutes or until tender. Add parsley, mango and lime juice. Stir gently and serve.
