Penne with Tomato Pesto

Ingredients

1 Tbsp. balsamic vinegar
½ cup Pesto Di Pomodoro
1-2 Tbsp. olive oil
4 oz. Ricotta Salata Cheese, shredded
1 lb. cooked penne

Instructions

(yields 4 portions)

Combine vinegar, Pesto Di Pomodoro, and olive oil. Mix well. Add all ingredients and toss gently. Serve warm or well chilled.
