Vegetarian Couscous
Ingredients
2 Tbsp. olive oil
2 Tbsp. Chopped Shallots in Oil
2 tsp. Garlic in Oil
2½ cups prepared Liquid Vegetable Consommé Prep
2 cups couscous
1 Tbsp. chopped parsley
1 tsp. chopped basil
1 tsp. chopped thyme
salt and pepper to taste
Instructions
(yields 8-10 portions)Heat oil and sauté the Chopped Shallots in Oil and Garlic in Oil. Add the prepared Liquid Vegetable Consommé Prep. Bring to a boil and add couscous. Stir briefly, take off heat, cover and allow to rest for 5 minutes. Add the herbs and fluff with a fork. Season with salt and pepper.
