Waldorf Rice Salad
Ingredients
1 cup mayonnaise
2 oz. walnuts
8 oz. green grapes, halved
1 apple, skin on, small diced
1 cup cooked, diced chicken
1 cup white rice
1 rib celery, bias cut
¼ cup Chopped Shallots in Oil
2 tsp. oil
2 oz. apple juice
2 cups prepared Chicken Base of your choice
Instructions
(yields 10-12 portions)Sauté the Chopped Shallots in Oil and celery. Add rice and coat with oil. Add the prepared Chicken Bases, cover and bake in a preheated 350° oven for 15-20 minutes or until tender. Cool thoroughly and stir in the remaining ingredients. Chill before service.
