Shrimp Sauce with Leeks & Shallots

Serves: Approximately 2 cups

Ingredients

  • ¼ cup chopped shallots
  • ½ tsp. chopped garlic
  • shrimp shells
  • 1 cup Chardonnay
  • 2 cups heavy cream
  • ½ tsp. Shrimp Base
  • 2 Tbsp. olive oil
  • 2 julienne leeks, whites only
  • 1+4 Tbsp. butter

Instructions

  1. 1 Heat the olive oil and sauté the chopped shallots, chopped garlic and shrimp shells for 3-5 minutes, until the shells turn orange.
  2. 2 Add the Chardonnay and reduce until almost dry.
  3. 3 Add the heavy cream and RC Shrimp Base and reduce by half.
  4. 4 Strain the mixture, discard the shells, and reserve sauce.
  5. 5 Sweat the leeks in 1 tablespoon of butter and add to the strained sauce.
  6. 6 Finish by whisking in remaining butter.
  7. 7 Strain the mixture, discard the shells, and reserve sauce.
  8. 8 Sweat the leeks in 1 tablespoon of butter and add to the strained sauce.
