Spicy Pumpkin Caramel Custard or Flan

Serves: 1 large Flan or 20 4 oz. individual

Ingredients

  • 1 lb. sugar
  • 2 Tbsp. water
  • ½ tsp. lemon juice
  • ⅛ tsp. Chipotle Chile Flavor Concentrate
  • 2 quarts half & half
  • 1 pkg. No Bake Custard Mix
  • ¼ tsp. Chipotle Chile Flavor Concentrate
  • 1 16 oz. bottle, prepared RC Spiced Pumpkin Coulis
  • 2 tsp. vanilla extract

Instructions

  1. 1 Caramel Sauce : In a heavy bottomed pot, combine sugar, water and lemon juice.
  2. 2 Heat mixture over medium flame until the sugar turns golden brown.
  3. 3 Immediately pour one tablespoon into each oven proof dessert cup.
  4. 4 Caution: this will be very hot.
  5. 5 Custard : Mix cold half & half with RC No Bake Custard Mix, vanilla extract , RC Chipotle Chile Concentrate and prepared RC Spiced Pumpkin Coulis and prepare following package instructions.
  6. 6 Fill each dessert cup with hot custard mix and refrigerate for two hours.
  7. 7 To unmold, simply invert onto your dessert plates.
  8. 8 To "Umamify" the recipe, add ½ tsp.
  9. 9 RC Umami Sensations™ Kokumi Powder and ½ tsp.
  10. 10 Mirepoix Powder to the cold half & half.
  11. 11 Toasted pumpkin seeds and RC Dessert Sauce Mixes can be used to garnish the Flan.
