Waldorf Rice Salad

Serves: 10-12 portions

Ingredients

  • ¼ cup chopped shallots
  • 1 rib celery, bias cut
  • 1 cup white rice
  • 1 cup cooked, diced chicken
  • 1 apple, skin on, small diced
  • 8 oz. green grapes, halved
  • 2 oz. walnuts
  • 1 cup mayonnaise
  • 2 tsp. oil
  • 2 oz. apple juice
  • 2 cups Premier Chicken Base

Instructions

  1. 1 Sauté the chopped shallots and celery.
  2. 2 Add rice and coat with oil.
  3. 3 Add the prepared Chicken Bases, cover and bake in a preheated 350° oven for 15-20 minutes or until tender.
  4. 4 Cool thoroughly and stir in the remaining ingredients.
  5. 5 Chill before service.
