Health Salad

Ingredients
- 5 oz. green bell pepper
- 5 oz. red bell pepper
- 5 oz. zucchini
- 7 oz. yellow squash
- 8 oz. cucumber
- 1 lb. shredded green cabbage
- 4 oz. matchstick cut carrots
- 10 oz. Health Salad Dressing
- Health Salad Dill Dressing- Yields 1½ quarts
- 2 cups RC Dill Sauce
- 3 cups sugar
- 2 cups vinegar
- ¼ cup whole grain mustard
- 1 cup vegetable oil
- ½ teaspoon onion powder
Instructions
- 1 Wash all produce thoroughly.
- 2 Cut bell peppers in half through stem. Remove seeds, ribs, then cut into ½ inch dice.
- 3 Trim ends of zucchini and yellow squash, then cut in half lengthwise and cut into ¼ inch thick half-moons.
- 4 Peel and seed cucumber, then cut into ½ inch dice.
- 5 Mix vegetable blend with Health Salad Dressing, then let salad marinate for 1-2 hours before serving.
