Chocolate Mocha Meringue Sandwiches

Ingredients
- 1 package Chocolate Mousse Mix, frozen sprinkle of cocoa
- 2 Chocolate Meringue Cookies
- 1 frozen mocha Chantilly creme filling
- 3 oz. Caramel Creme Anglaise
- 2 oz. Caramel Sauce
- 3 each fresh raspberries
Instructions
- 1 Layer dessert sandwich starting with a chocolate meringue cookie on bottom, topped with frozen RC Chocolate Mousse Mix, frozen Mocha Chantilly Crème filling, and topped with another chocolate meringue cookie.
- 2 Spread 3 oz. caramel crème anglaise sauce on a chilled 12 inch plate and create circular designs with caramel sauce in caramel crème anglaise.
- 3 Place layered chocolate meringue sandwich in middle of plate and decorate with fresh raspberries on rim of plate.
- 4 Sprinkle with cocoa powder and serve when frozen layers have just started to melt.
