Serves: approximately 1¼ quarts

Ingredients

  • 1 qt. prepared Demi Glace Sauce Mix
  • 1 cup Madeira
  • 1 tsp. whole peppercorns
  • 1 bay leaf
  • 2 Tbsp. chopped shallots
  • 1 Tbsp. whole butter

Instructions

  1. 1 Briefly sauté the chopped shallots.
  2. 2 Add bay leaf, peppercorns, and Madeira.
  3. 3 Reduce by two-thirds.
  4. 4 Strain and add the prepared |demiglacesauce|.
  5. 5 Finish with whole butter.
  6. 6 (yields approximately 1¼ quarts)
