Ingredients
- 1 qt. prepared Demi Glace Sauce Mix
- 1 cup Madeira
- 1 tsp. whole peppercorns
- 1 bay leaf
- 2 Tbsp. chopped shallots
- 1 Tbsp. whole butter
Instructions
- 1 Briefly sauté the chopped shallots.
- 2 Add bay leaf, peppercorns, and Madeira.
- 3 Reduce by two-thirds.
- 4 Strain and add the prepared |demiglacesauce|.
- 5 Finish with whole butter.
- 6 (yields approximately 1¼ quarts)
