Gluten Free Roquefort Demi Glace Sauce

Ingredients
- 2 lbs. Gluten-Free Demi Glace Sauce Mix
- 2 gallons water
- 8 oz. red wine
- 8 oz. good quality salted butter
- 5 Tbsp. dry Bleu Cheese Dressing Mix
Instructions
- 1 Make a slurry with the cold water and RC Gluten Free Demi-Glace Mix.
- 2 Heat mixture to a boil while stirring frequently, reduce heat to a simmer.
- 3 Add the red wine to dry RC Bleu Cheese Dressing Mix and thoroughly blend until there are no lumps.
- 4 Add to hot sauce mixture (minimum temperature 165°F) and finish with butter.
