Florentine Hollandaise

Ingredients
- 1 Tbsp. chopped shallots
- 1 Tbsp. whole butter
- 2 oz. fresh spinach, cleaned and dried
- 1 cup prepared Hollandaise Sauce Mix
- ¼ tsp. Worcestshire
- pinch nutmeg
- salt & pepper
Instructions
- 1 Sauté the chopped shallots in the butter.
- 2 Add the spinach and toss until wilted.
- 3 Chop the spinach and shallot mixture.
- 4 Combine all ingredients and mix well.
- 5 Season with salt and pepper.
- 6 Hold in steam table for service.
