Florentine Hollandaise

Serves: 10 oz.

Ingredients

  • 1 Tbsp. chopped shallots
  • 1 Tbsp. whole butter
  • 2 oz. fresh spinach, cleaned and dried
  • 1 cup prepared Hollandaise Sauce Mix
  • ¼ tsp. Worcestshire
  • pinch nutmeg
  • salt & pepper

Instructions

  1. 1 Sauté the chopped shallots in the butter.
  2. 2 Add the spinach and toss until wilted.
  3. 3 Chop the spinach and shallot mixture.
  4. 4 Combine all ingredients and mix well.
  5. 5 Season with salt and pepper.
  6. 6 Hold in steam table for service.
