Vegetarian Couscous
8-10 portions
Ingredients
- 1 tsp. chopped basil
- 1 Tbsp. chopped parsley
- 2 cups couscous
- 2½ cups prepared Liquid Vegetable Consommé Prep
- 2 tsp. chopped garlic
- 2 Tbsp. chopped shallots
- 2 Tbsp. olive oil
- 1 tsp. chopped thyme
- salt and pepper to taste
Instructions
- 1 Heat oil and sauté the chopped shallots and chopped garlic.
- 2 Add the prepared Liquid Vegetable Consommé Prep.
- 3 Bring to a boil and add couscous.
- 4 Stir briefly, take off heat, cover and allow to rest for 5 minutes.
- 5 Add the herbs and fluff with a fork.
- 6 Season with salt and pepper.
