Baby Lamb Chops
42 baby lamb chops or 6 racks
- 1 Tbsp. minced fresh rosemary
- 2 Tbsp. Roasted Garlic Base
- 6 racks baby lamb shops trimmed & frenched
- 2 Tbsp. Dijon mustard
- 1 Trim excess fat & sinew from lamb racks and french rib bones.
- 2 Combine RC Roasted Garlic Base, rosemary & Dijon mustard in a bowl and blend.
- 3 Marinate lamb racks with mixture and roast whole (in a 350°F oven) or cut into individual chops and sauté until internal temperature reaches 145°F internal.
