Beef Burritos

Serves: 10-12 portions

Ingredients

  • ½ cup chopped green chiles
  • 2 medium tomatoes, diced
  • 1 tsp. chopped garlic
  • 1½ lbs. lean ground beef
  • 1 cup chopped onion
  • ¾ tsp. Liquid Vegetable Consommé Prep
  • 1 Tbsp. corn oil
  • 1½ lbs. shredded cheddar
  • ½ cup chopped scallions
  • 10-12 flour tortillerent
  • 2-2½ Tbsp. Ancho Chile Flavor Concentrate
  • 15½ oz. can black beans, drained and rinsed

Instructions

  1. 1 Heat oil and brown the ground beef.
  2. 2 Pour off excess fat and add onions, chopped garlic, tomatoes and green chilies.
  3. 3 Sauté the mixture until onions are translucent.
  4. 4 Add scallions, Ancho Chile Flavor Concentrate, black beans and Liquid Vegetable Consommé Prep.
  5. 5 Simmer mixture for 3-5 minutes to blend the flavors.
  6. 6 Warm tortillas, and portion meat mixture on tortillas.
  7. 7 Top with cheese, roll up and serve with sour cream and guacamole.
