Bordelaise Sauce Variation

Serves: 1 quart

Ingredients

  • 1 Tbsp. chopped shallots
  • ½ tsp. thyme
  • 1 bay leaf
  • ½ tsp. whole peppercorns
  • 3 cups red wine
  • 3 cups prepared Instant Brown Gravy
  • 1 Tbsp. lemon juice
  • 1 Tbsp. cold butter
  • 4 oz. poached, diced bone marrow

Instructions

  1. 1 Reduce by two-thirds.
  2. 2 Strain and add the prepared No Added MSG Instant Brown Gravy Mix and lemon juice.
  3. 3 Finish with whole butter.
  4. 4 Garnish with poached marrow.
