Chasseur Sauce
approximately 1¾ quarts
Ingredients
- 2 cups tomato concasse
- 2 Tbsp. whole butter
- 10 oz. sliced mushrooms
- 2 Tbsp. chopped shallots
- ½ tsp. chopped garlic
- 1 cup Chablis
- 3 oz. brandy
- 1 quart prepared Demi Glace Sauce
- 1 Tbsp. chopped parsley
- 1 tsp. Gluten-Free Liquid Beef Consommé Prep
Instructions
- 1 Sauté the mushrooms, chopped shallots and chopped garlic in butter.
- 2 Add the Chablis and brandy and reduce by half.
- 3 Add the remaining ingredients and simmer for 5-10 minutes.
