Chasseur Sauce

Serves: approximately 1¾ quarts

Ingredients

  • 2 cups tomato concasse
  • 2 Tbsp. whole butter
  • 10 oz. sliced mushrooms
  • 2 Tbsp. chopped shallots
  • ½ tsp. chopped garlic
  • 1 cup Chablis
  • 3 oz. brandy
  • 1 quart prepared Demi Glace Sauce
  • 1 Tbsp. chopped parsley
  • 1 tsp. Gluten-Free Liquid Beef Consommé Prep

Instructions

  1. 1 Sauté the mushrooms, chopped shallots and chopped garlic in butter.
  2. 2 Add the Chablis and brandy and reduce by half.
  3. 3 Add the remaining ingredients and simmer for 5-10 minutes.
