Country Style Baked Mashed Potatoes

Ingredients
- 10 lbs. skin on red bliss potatoes, washed well
- 2½ Tbsp. salt
- 3 cups whole milk
- 12 oz. butter
- ½ tsp. ground white pepper
- 1 lb sour cream
- 6 scallions, sliced
- to taste, dry Hearty Foundations™ Reserve GF Gluten-Free Vegetable Base No Added MSG
- to top shredded cheddar
Instructions
- 1 In a large pot add washed red bliss potatoes.
- 2 Cover with cold water and bring to a boil.
- 3 Add salt when water boils and cook potatoes until fork tender, about 15 minutes.
- 4 Drain potatoes, return pot to stove uncovered on low heat to evaporate excess moisture.
- 5 While potatoes are cooking, combine butter, white pepper in a sauce pan and bring to a simmer add to boiled potatoes and mash with hand held potato masher.
- 6 Fold in sour cream and chopped scallions, then season with RC Hearty Foundations® Reserve GF Gluten Free Vegetable Base.
- 7 Place seasoned prepared potato mixture in an oven proof dish and top with shredded cheddar cheese.
- 8 Bake at 350°F until cheese is melted and center is 165°F.
- 9 Hold at 120°F or cool to 40°F.
