Country Style Baked Mashed Potatoes

Country Style Baked Mashed Potatoes Serves: 12 lbs


  • 10 lbs. skin on red bliss potatoes, washed well
  • 2½ Tbsp. salt
  • 3 cups whole milk
  • 12 oz. butter
  • ½ tsp. ground white pepper
  • 1 lb sour cream
  • 6 scallions, sliced
  • to taste, dry Hearty Foundations™ Reserve GF Gluten-Free Vegetable Base No Added MSG
  • to top shredded cheddar


  1. 1 In a large pot add washed red bliss potatoes.
  2. 2 Cover with cold water and bring to a boil.
  3. 3 Add salt when water boils and cook potatoes until fork tender, about 15 minutes.
  4. 4 Drain potatoes, return pot to stove uncovered on low heat to evaporate excess moisture.
  5. 5 While potatoes are cooking, combine butter, white pepper in a sauce pan and bring to a simmer add to boiled potatoes and mash with hand held potato masher.
  6. 6 Fold in sour cream and chopped scallions, then season with RC Hearty Foundations® Reserve GF Gluten Free Vegetable Base.
  7. 7 Place seasoned prepared potato mixture in an oven proof dish and top with shredded cheddar cheese.
  8. 8 Bake at 350°F until cheese is melted and center is 165°F.
  9. 9 Hold at 120°F or cool to 40°F.
