Gluten Free Fresh Cranberry and Dried Fruit Compote

Ingredients
- 1 oz. canola oil
- 6 oz. onions cut in small dice
- 2 oz. sushi vinegar
- 3 fresh navel oranges, pureed
- 48 oz. fresh cranberries washed well
- 8 oz. pomegranate juice
- 15 oz. golden raisins
- 11 oz. dried mixed fruit, pears, apricots, prunes
- 5 oz. dried cherries
- 8 oz. pure maple syrup
- 4 oz. Marsala wine
- 2 tsp. pumpkin pie spice
- 2 cups Wild Maine Blueberries
- ½ tsp. Cinnamon Flavor
- 2 tsp. Ginger Puree
- ¼ tsp. vanilla extract
- 1 tsp. Blood Orange Extract
- ½ tsp. Almond Flavor
Instructions
- 1 In a stainless steel pot heat canola oil then add small diced onion.
- 2 Sauté until onion is caramelized.
- 3 Add rest of ingredients except RC Flavorings and Wild Maine Blueberries and cook until fresh cranberries burst and dried fruits are soft.
- 4 Stir frequently.
- 5 After cranberries burst, add fresh Wild Maine Blueberries and RC Flavorings.
- 6 Keep refrigerated.
