Gluten Free Roquefort Demi Glace Sauce

Serves: 2 gallons


  • 2 lbs. Gluten-Free Demi Glace Sauce Mix
  • 2 gallons water
  • 8 oz. red wine
  • 8 oz. good quality salted butter
  • 5 Tbsp. dry Bleu Cheese Dressing Mix


  1. 1 Make a slurry with the cold water and RC Gluten Free Demi-Glace Mix.
  2. 2 Heat mixture to a boil while stirring frequently, reduce heat to a simmer.
  3. 3 Add the red wine to dry RC Bleu Cheese Dressing Mix and thoroughly blend until there are no lumps.
  4. 4 Add to hot sauce mixture (minimum temperature 165°F) and finish with butter.
