Health Salad

Health Salad Serves: 4 lbs.

Ingredients

  • 5 oz. green bell pepper
  • 5 oz. red bell pepper
  • 5 oz. zucchini
  • 7 oz. yellow squash
  • 8 oz. cucumber
  • 1 lb. shredded green cabbage
  • 4 oz. matchstick cut carrots
  • 10 oz. Health Salad Dressing
  • Health Salad Dill Dressing- Yields 1½ quarts
  • 2 cups RC Dill Sauce
  • 3 cups sugar
  • 2 cups vinegar
  • ¼ cup whole grain mustard
  • 1 cup vegetable oil
  • ½ teaspoon onion powder

Instructions

  1. 1 Wash all produce thoroughly.
  2. 2 Cut bell peppers in half through stem. Remove seeds, ribs, then cut into ½ inch dice.
  3. 3 Trim ends of zucchini and yellow squash, then cut in half lengthwise and cut into ¼ inch thick half-moons.
  4. 4 Peel and seed cucumber, then cut into ½ inch dice.
  5. 5 Mix vegetable blend with Health Salad Dressing, then let salad marinate for 1-2 hours before serving.
