Mushroom Sauce

Serves: approximately 3 cups

Ingredients

  • 2 oz. sliced mushrooms
  • ¾ cup dry white wine
  • 2 cups prepared Demi Glace Sauce Mix
  • ½ cup tomato puree
  • 1 tsp. Mushroom Base
  • 2 Tbsp. chopped shallots
  • 2 tsp. chopped parsley

Instructions

  1. 1 Sauté the chopped shallots and sliced mushrooms.
  2. 2 Add white wine and reduce by two-thirds.
  3. 3 Add the prepared |demiglacesauce|, tomato puree and |mushroombase|.
  4. 4 Simmer for 5-10 minutes.
  5. 5 Finish with chopped parsley.
