Roasted Tomato Vinaigrette

Serves: approximately 1¼ quarts

Ingredients

  • ½ tsp. thyme
  • 2 tsp. dried basil
  • 2 Tbsp. chopped shallots
  • ¾ tsp. Roasted Garlic Base
  • 1 tsp. Roasted Onion Base
  • 6 plum tomatoes, roasted, peeled, seeded and small diced
  • 1 tsp, oregano
  • 1 Tbsp, light brown sugar
  • salt and pepper to taste

Instructions

  1. 1 Combine all ingredients and puree. Serve as a salad dressing.
