Roquefort Demi Glace
- 2 gallons prepared Demi Glace Sauce
- 8 oz. red wine
- 5 Tbsp. dry Bleu Cheese
- 8 oz. salted butter
- 1 Bring prepared Demi Glace Sauce to a simmer.
- 2 In a bowl, add the red wine to dry RC Bleu Cheese Dressing Mix and thoroughly blend until there are no lumps.
- 3 Add to hot sauce mixture and finish with butter.
- 4 Reserve for use or refrigerate.
