Roquefort Demi Glace

Serves: 2 gallons


  • 2 gallons prepared Demi Glace Sauce
  • 8 oz. red wine
  • 5 Tbsp. dry Bleu Cheese
  • 8 oz. salted butter


  1. 1 Bring prepared Demi Glace Sauce to a simmer.
  2. 2 In a bowl, add the red wine to dry RC Bleu Cheese Dressing Mix and thoroughly blend until there are no lumps.
  3. 3 Add to hot sauce mixture and finish with butter.
  4. 4 Reserve for use or refrigerate.
