Sauce Robert

Serves: approximately 5 cups


  • 1 medium onion, fine diced
  • 2 Tbsp. clarified butter
  • 2 cups dry white wine
  • 1 qt. prepared Demi Glace Sauce
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. softened whole butter


  1. 1 Lightly caramelize the onions in the clarified butter.
  2. 2 Add the white wine and reduce by two-thirds.
  3. 3 Add the prepared RC Demi Glace Sauce and mustard.
  4. 4 Finish with whole butter.
