Sausage Hollandaise

Serves: 1 cup

Ingredients

  • 1 tsp. whole grain mustard
  • 1½ tsp. lemon juice
  • ¼ tsp. Worcestershire
  • ¼ tsp. hot sauce
  • 4 oz. sausage
  • 2 cups prepared Hollandaise Sauce
  • 2 tsp. chopped parsley
  • salt & pepper

Instructions

  1. 1 Grill or bake sausage.
  2. 2 Remove meat from casing and discard casing.
  3. 3 Small dice sausage meat.
  4. 4 Add remaining ingredients and mix well.
  5. 5 Season with salt and pepper.
  6. 6 Hold in steam table for service.
