Seafood Couscous

Serves: Approximately 10-12 portions

Ingredients

  • 4-6 drops Lemongrass Flavor
  • 20 oz. couscous
  • 3 cups prepared No Added MSG Liquid Seafood Consomme Prep
  • 1 cup Chardonnay
  • ½ tsp. chopped fresh thyme
  • 1 bay leaf
  • 2 Tbsp. olive oil
  • 1 lb. firm fleshed fish, cut into 2 inch squares
  • 1 lb. shrimp, peeled
  • 1 lb. sea scallops, cleaned
  • ½ lb. squid, cleaned and cut into rings
  • 1 Tbsp. chopped parsley

Instructions

  1. 1 Bring the prepared RC No Added MSG Liquid Seafood Consomme Prep, Chardonnay and bay leaf to a boil.
  2. 2 Add the oil, fish and shrimp.
  3. 3 Return to a boil.
  4. 4 Add the remaining ingredients.
  5. 5 Remove from heat.
  6. 6 Stir and cover for 5-10 minutes.
  7. 7 Gently fluff with a fork.
  8. 8 Serve by arranging seafood on top of couscous.
