Shrimp Sauce with Leeks & Shallots
Approximately 2 cups
Ingredients
- ¼ cup chopped shallots
- ½ tsp. chopped garlic
- shrimp shells
- 1 cup Chardonnay
- 2 cups heavy cream
- ½ tsp. Shrimp Base
- 2 Tbsp. olive oil
- 2 julienne leeks, whites only
- 1+4 Tbsp. butter
Instructions
- 1 Heat the olive oil and sauté the chopped shallots, chopped garlic and shrimp shells for 3-5 minutes, until the shells turn orange.
- 2 Add the Chardonnay and reduce until almost dry.
- 3 Add the heavy cream and RC Shrimp Base and reduce by half.
- 4 Strain the mixture, discard the shells, and reserve sauce.
- 5 Sweat the leeks in 1 tablespoon of butter and add to the strained sauce.
- 6 Finish by whisking in remaining butter.
- 7 Strain the mixture, discard the shells, and reserve sauce.
- 8 Sweat the leeks in 1 tablespoon of butter and add to the strained sauce.
