Turkey Meat Loaf

Ingredients
- 3 oz. Plain Bread Crumbs
- 1 Tbsp. No Added MSG Harvest Vegetable Base
- 8 oz. prepared Turkey Base
- 6 oz. Sour Cream
- 3 oz. Fresh Celery, diced
- 4 lbs. Ground Turkey Meat**
- 1 oz. chopped garlic
- 6 oz. Fresh Onion diced
- 1 oz. Vegetable Oil
- 10 oz. Fresh Arugula
- 1½ tsp. Poultry Seasoning
- 3 Eggs
- 1½ tsp. Black Pepper
- 12 oz. Tomato Paste
Instructions
- 1 Wash arugula thoroughly removing all sand, drain & cut into 1 inch pieces.
- 2 In a sauté pan heat vegetable oil and add onion & chopped garlic, sauté until onion is transparent.
- 3 Add arugula and sauté until it wilts.
- 4 Cool to 40°F minimum.
- 5 Prepare Turkey Base.
- 6 In a large mixing bowl combine all ingredients and mix until all is incorporated.
- 7 Form into a loaf on a parchment lined sheet pan.
- 8 Bake in a 350°F oven until internal temperature reaches 165°F minimum.
