Turkey Meat Loaf

Serves: 6 lbs.

Ingredients

  • 3 oz. Plain Bread Crumbs
  • 1 Tbsp. No Added MSG Harvest Vegetable Base
  • 8 oz. prepared Turkey Base
  • 6 oz. Sour Cream
  • 3 oz. Fresh Celery, diced
  • 4 lbs. Ground Turkey Meat**
  • 1 oz. chopped garlic
  • 6 oz. Fresh Onion diced
  • 1 oz. Vegetable Oil
  • 10 oz. Fresh Arugula
  • 1½ tsp. Poultry Seasoning
  • 3 Eggs
  • 1½ tsp. Black Pepper
  • 12 oz. Tomato Paste

Instructions

  1. 1 Wash arugula thoroughly removing all sand, drain & cut into 1 inch pieces.
  2. 2 In a sauté pan heat vegetable oil and add onion & chopped garlic, sauté until onion is transparent.
  3. 3 Add arugula and sauté until it wilts.
  4. 4 Cool to 40°F minimum.
  5. 5 Prepare Turkey Base.
  6. 6 In a large mixing bowl combine all ingredients and mix until all is incorporated.
  7. 7 Form into a loaf on a parchment lined sheet pan.
  8. 8 Bake in a 350°F oven until internal temperature reaches 165°F minimum.

Notes

Ingredient Note**

Ground Turkey Breast alone can be used in the recipe if you wish. A mixture of half white & dark ground Turkey meat is suggested for a moister loaf.
