Vegetarian Couscous

Serves: 8-10 portions

Ingredients

  • 1 tsp. chopped basil
  • 1 Tbsp. chopped parsley
  • 2 cups couscous
  • 2½ cups prepared Liquid Vegetable Consommé Prep
  • 2 tsp. chopped garlic
  • 2 Tbsp. chopped shallots
  • 2 Tbsp. olive oil
  • 1 tsp. chopped thyme
  • salt and pepper to taste

Instructions

  1. 1 Heat oil and sauté the chopped shallots and chopped garlic.
  2. 2 Add the prepared Liquid Vegetable Consommé Prep.
  3. 3 Bring to a boil and add couscous.
  4. 4 Stir briefly, take off heat, cover and allow to rest for 5 minutes.
  5. 5 Add the herbs and fluff with a fork.
  6. 6 Season with salt and pepper.
