Waldorf Rice Salad

Ingredients
- ¼ cup chopped shallots
- 1 rib celery, bias cut
- 1 cup white rice
- 1 cup cooked, diced chicken
- 1 apple, skin on, small diced
- 8 oz. green grapes, halved
- 2 oz. walnuts
- 1 cup mayonnaise
- 2 tsp. oil
- 2 oz. apple juice
- 2 cups Premier Chicken Base
Instructions
- 1 Sauté the chopped shallots and celery.
- 2 Add rice and coat with oil.
- 3 Add the prepared Chicken Bases, cover and bake in a preheated 350° oven for 15-20 minutes or until tender.
- 4 Cool thoroughly and stir in the remaining ingredients.
- 5 Chill before service.
