Chicken Soup with Lemongrass

Chicken Soup with Lemongrass Serves: 1+ gallons

Ingredients

  • 2 ribs celery, bias cut
  • 2 carrots, bias cut
  • 2 tsp. olive oil
  • 2 ½ oz. RC Liquid Chicken Consommé Prep
  • 1 tsp. Roasted Onion Base
  • ¼ tsp. Roasted Garlic Base
  • 1 gal. water
  • 3 cups fresh spinach, cleaned
  • 12-16 oz. chicken, poached and julienne
  • 4 cups cooked udon noodles, cut into 4 inch lengths
  • ¼ - ½ tsp. Lemongrass Flavor

Instructions

  1. 1 Slowly heat the olive oil.
  2. 2 Sauté the celery and carrots for 2-3 minutes.
  3. 3 Add the, RC Gluten Free Chicken Consommé Prep, RC Roasted Onion Base, RC Roasted Garlic Base and water.
  4. 4 Simmer for 5 minutes.
  5. 5 Add the spinach, chicken and cooked udon noodles.
  6. 6 Finish with the RC Lemongrass Flavor and serve.

Notes

Value Added Suggestions:

To "Umamify" the recipe, simply add 1 tsp. RC Umami Sensations™ Wheat Free Soy Sauce Powder and 1 tsp. RC Umami Sensations™ Shiitake Mushroom Extract Powder.
