Chicken Soup with Lemongrass

Ingredients
- 2 ribs celery, bias cut
- 2 carrots, bias cut
- 2 tsp. olive oil
- 2 ½ oz. RC Liquid Chicken Consommé Prep
- 1 tsp. Roasted Onion Base
- ¼ tsp. Roasted Garlic Base
- 1 gal. water
- 3 cups fresh spinach, cleaned
- 12-16 oz. chicken, poached and julienne
- 4 cups cooked udon noodles, cut into 4 inch lengths
- ¼ - ½ tsp. Lemongrass Flavor
Instructions
- 1 Slowly heat the olive oil.
- 2 Sauté the celery and carrots for 2-3 minutes.
- 3 Add the, RC Gluten Free Chicken Consommé Prep, RC Roasted Onion Base, RC Roasted Garlic Base and water.
- 4 Simmer for 5 minutes.
- 5 Add the spinach, chicken and cooked udon noodles.
- 6 Finish with the RC Lemongrass Flavor and serve.
