Creamy Roasted Tomato Soup
1½+ gallons
Ingredients
- 3 medium onions
- 2 lbs. reduced sodium canned plum tomatoes
- ¼ cup olive oil
- 1 Tbsp. chopped garlic
- 1 tsp. oregano
- 1 Tbsp. fresh basil, chopped
- 10 oz. gluten free tomato paste
- 1 gallon prepared RC Hearty Foundations™ Reserve™ GF Gluten Free Vegetable Base
- fresh ground pepper, to taste
Instructions
- 1 Remove onion skins and cut into a large dice.
- 2 In a heated soup pot, add oil and cook onions until they start to caramelize then add chopped garlic and sauté until garlic just turns golden.
- 3 Add tomatoes and roast in pot until juice is reduced by half in volume.
- 4 Then add herbs, tomato paste and both prepared cream sauce and prepared RC Hearty Foundations™ Reserve™ GF Gluten Free Vegetable Base.
- 5 Simmer for 30-40 minutes puree mixture and season with additional dry RC Hearty Foundations™ Reserve™ GF Gluten Free Vegetable Base.
