Garden Vegetable Soup with Beef
5+ quarts
Ingredients
- 1 Tbsp. olive oil
- 1 tsp. chopped garlic
- 1 medium onion, small diced
- 2 carrots, peeled and small diced
- 1 rib celery, small diced
- 1 cup corn kernels
- 1 lb. cooked top round or chuck, small diced
- 1 tsp. chopped fresh thyme
- 1 Tbsp. chopped fresh basil
- 1 bay leaf
- 1 medium potato, peeled and small diced
- 3 quarts prepared RC Beef Base of your choice
- Liquid Vegetable Consommé Prep to taste
Instructions
- 1 Sauté vegetables in oil.
- 2 Add remaining ingredients and simmer until potatoes are tender.
- 3 Adjust seasoning with Liquid Vegetable Consommé Prep.
