- 1 tsp. chopped fresh thyme
- 2-4 tsp. minced fresh basil
- 1 bay leaf
- 1 qt. prepared Hearty Foundations™ Vegan GF FlavorMatch® Gluten-Free Chicken Flavor Base
- 8 oz. lentils, soaked and drained
- ¼ cup tomato paste
- 1-2 Tbsp. Parmesan cheese
- 1½ cups diced tomatoes
- 1 medium onion, small diced
- ½ tsp. chopped garlic
- 2 Tbsp. olive oil
- pepper to taste
- 1 Sauté the garlic and onion in olive oil, add the tomatoes, chopped fresh basil, herbs and prepared Vegan GF FlavorMatch® Gluten-Free Chicken Flavor Base.
- 2 Bring to a simmer and add lentils.
- 3 Simmer until lentils soften.
- 4 Add the tomato paste and pepper.
- 5 Heat thoroughly.
- 6 Serve as a soup sprinkled with cheese or as a sauce over pasta. Also, try adding 2-4 tsp. of RC Pesto Sauce
