Vegetable Pasta
6-8 portions
Ingredients
- 2 Tbsp. cornstarch
- 1 Tbsp. water
- 1 pint prepared Hearty Foundations™ Vegan GF FlavorMatch® Gluten-Free Chicken Flavor Base No Added MSG
- 1½ lbs. vegetables of your choice such as carrots, broccoli, peas
- 2 tsp. chopped garlic
- 2-3 Tbsp. olive oil
- ¼ cup whole butter (optional)
- 1 lb. fettucini, cooked
- fresh cracked black pepper to taste
Instructions
- 1 Combine the water and cornstarch to make a slurry.
- 2 Slowly add the slurry to the stock and vegetable mixture.
- 3 Add the butter (optional) and stir to incorporate.
- 4 Once the stock simmers, add the pasta and heat thoroughly.
- 5 Using tongs, portion the pasta and top with vegetables.
- 6 Pour the remaining sauce over the portions and season with cracked black pepper.
