Gluten Free Salted Caramel Apple Cherry Tart

Ingredients
- For the shortbread crust:
- 1½ cups dairy free butter
- ¾ cup granulated brown sugar
- 3 tsp. vanilla extract
- ¾ tsp. salt
- 1½ tsp. hazelnut extract
- 3 cups gluten-free flour
- For the filling:
- 1 – 15 oz. pkg. RC Apple Fruit Filling
- 44 oz. boiling water
- 4½ oz. RC Salted Caramel Sauce Mix, dry
- 1 lb. dried cherries
- For the streusel topping:
- 2¼ cups old fashioned oats
- ¾ cup brown sugar
- ½ tsp. RC Cinnamon Flavor
- ¾ cup dairy free butter, very cold
Instructions
- 1 To prepare streusel topping, in a food processor add 1 cup old fashioned oats and process until oats are a flour like consistency.
- 2 Add to a mixing bowl with rest of whole old fashioned oats, brown sugar and RC Cinnamon Flavor and blend together.
- 3 With a pastry blender, cut in cold dairy free butter to mixture until butter is the size of small peas and keep refrigerated.
- 4 For the shortbread crust:
- 5 Preheat oven to 300°F. Prepare crust first, combine dairy free butter, sugar, vanilla, salt, hazelnut extract and gluten-free flour together in a mixing bowl fitted with paddle.
- 6 Mix on low until all ingredients are blended together.
- 7 Divide dough into 3 even portions.
- 8 Spray 3-9 inch tart tins with pan release and press dough into tart pans making sure dough is even thickness on bottom and sides of tart tins. Bake for 15 minutes.
- 9 For the filling:
- 10 Prepare RC Apple Fruit Filling per package instructions.
- 11 Add dry RC Salted Caramel Sauce Mix and cherries.
- 12 Mix filling until blended and reserve.
- 13 Fill precooked tart shell shortbread crusts with prepared apple filling and top with prepared streusel topping.
- 14 Bake in a 350°F oven until streusel topping is golden brown. Remove from oven and cool tarts before serving.
Notes
